Z ostrim no\u017eem naredimo tanke vzdol\u017ene zareze na ko\u017ei, pribli\u017eno 1 cm narazen, da dobimo majhne kvadratke. Pazimo, da ne zare\u017eemo v meso.<br \/>\nSvinjino postavimo s ko\u017eo navzgor na kro\u017enik in jo \u010dez no\u010d pustimo v hladilniku, da se ko\u017ea<br \/>\ndobro posu\u0161i, le tako bo hrustljava in lepo zape\u010dena.<br \/>\n2. korak:<br \/>\nPred pe\u010denjem pripravimo marinado. V mo\u017enar damo ro\u017emarin, 2 \u017eli\u010dki soli, kumino, olupljen strok \u010desna in 2 \u017elici olja. Dobro stremo, da nastane pasta. Seveda lahko uporabimo tudi druge za\u010dimbe, nekateri prisegajo na dimljeno papriko, nekateri pa uporabijo azijsko me\u0161anico petih za\u010dimb.<br \/>\n3. korak:<br \/>\nRebra damo v peka\u010d, tako da je ko\u017ea spodaj. Meso ob straneh in na spodnji strani prema\u017eemo z marinado. Meso obrnemo, osu\u0161imo ko\u017eo s kuhinjsko brisa\u010dko in jo prema\u017eemo z olivnim oljem in dobro za\u010dinimo s soljo. V peka\u010d prilijemo malo vode, previdno, da ne speremo marinade z mesa. Pe\u010demo v pe\u010dici 3 ure pri 150\u00b0C, nato meso prema\u017eemo z malo olja, in pe\u010demo \u0161e 30 minut pri 230\u00b0C, da ko\u017ea postane hrustljava. Zadnjih petnajst minut pe\u010denja opazujemo, da se ne za\u017ege.
